Taste Optimization In Oral Dosage Forms: A Sensory Panel Study With The Focus On High-Intensity Sweeteners

Palatability can influence medication acceptance, making taste optimization especially important for pediatric and geriatric oral dosage forms. A professional sensory panel compared five high-intensity sweeteners in a powder blend containing quinine as a model bitter API. Sucralose, neotame, and aspartame achieved the strongest overall scores, while formulations containing advantame and sodium saccharin were perceived as significantly more bitter. Neotame delivered a bitterness profile comparable to aspartame and also demonstrated uniform distribution at a low concentration in a mannitol and sorbitol powder blend.
