What is Trehalose?
Trehalose is non-reducing disaccharide composing glucose molecule in a-1 bond. It exists as free form widely in plants, animals and microorganisms. Especially, some fungi like Shiitake-mushrooms, yeasts, seaweeds and shrimps contain more than 10% on dry basis. It is ingested daily in human history.
